STILLWATER, Okla. —
The Stillwater Farmers’ Market has two more weeks inside Cowboy Mall before moving outside to Strickland Park. The winter market is located at Hall of Fame and Monroe and is open every Saturday from 10 a.m. to 1 p.m.
Fresh produce in season includes carrots, greens, fresh herbs, lettuce, green onion, micro-greens and spinach. New-to-the-market visitors will find cool season plants, micro-greens and eggs. Other available food grown or made locally includes lamb, beef, cheese, tamales and enchiladas that are tucked away in ice chests along with handmade Santa Fe-style Mexican food, including salsa fresca, home-style canned salsa, enchiladas, tamales, appetizers and desserts.
We are expecting goat cheese, breads, tomatoes and buffalo to return soon.
Farmers’ Market Pasta Casserole
1 pound Whitmore Farms ground beef
1 quart Cocina San Pasqual pasta sauce
1 pound rotina pasta, cooked
8-11 ounces Wall’s Dairy mozzarella cheese
1 tablespoon parsley, chopped
1 teaspoon fresh oregano minced or 1/2 teaspoon dried
1 onion, chopped
1 clove garlic minced
Saute onion and garlic until limp. Remove from skillet, then brown and drain ground beef. Add salt and pepper to taste.
Stir together meat, onion, garlic, herbs and cooked pasta. Mix in pasta sauce. Pour into greased casserole dish, top with grated mozzarella cheese and place in a 375-degree oven for 30 minutes or until hot and the cheese has melted. If the ingredients are in a microwave proof dish, place the casserole in the microwave and heat thoroughly.
