The Stillwater Farmers Market is open each Saturday, weather permitting. Winter market hours are from 10 a.m. to 1 p.m. indoors at Northern Oklahoma College, corner of Hall of Fame and Monroe.
What you might find at the market this week are beef, honey, lettuces, micro greens, pecans, sweet potatoes, winter squash, breads and baked goods, Santa Fe-style Mexican food and fresh cut flowers.
The recipe this week uses sweet potatoes. A medium sweet potato has four times the recommended daily intake for beta carotene and provides 35 percent of your daily recommended vitamin C. Sweet potatoes have four grams of fiber and only 100 calories when baked in the skin. Stop by the market to gather ingredients for this week’s recipe:
SWEET POTATO SPREAD
3/4 cup roasted/baked sweet potato, mashed
3/4 cup white cannellini beans, slightly mashed (canned beans will work if drained and rinsed)
2 tablespoons olive oil
1/4 to 1/2 teaspoon ground cumin powder
1 generous tablespoon tahini
1/4 teaspoon cinnamon
1/8 teaspoon cayenne pepper
Put everything into a small food processor and blend until smooth. Adjust your cumin and cinnamon to your taste.
Serve on apple slices or use as a sandwich spread.
